Crayfish with Lemon Butter Sauce

Serves 2 people



2 cooked Crayfish (each approximately 500gr or 1 x 1kg)
75gr Clarified Butter
1 level Tablespoon of finely chopped Parsley
1 level Teaspoon of Lemon Juice
A shake of Pepper



  1. Put butter into the saucepan. Cook very slowly until it turns light brown.
  2. Stir in the remaining ingredients and pour over the crayfish.
  3. Serve immediately.


Chef’s Comments: Have your crayfish hot and ready to serve.
