As part of cold chain improvement, we’re adding the humidity that’s so important when lobsters are exposed to air during transportation and grading.
Mt Gambier, for instance, has been insulated and a covered loading bay added, so that water from the tanks maintains high humidity while external doors are kept closed. (Mt Gambier is my favourite factory these days.)
We’ve also fitted a refrigeration unit to the large Te Anau truck, L0BSTR, including software to maintain constant humidity and temperate during the eight-hour journey to Christchurch. It can be seen above the cab in the photo.
The chart below shows how the unit keeps temperature consistently lower and humidity consistently higher than before. Similar units will be introduced progressively throughout the fleet of trucks.
